Pumpkin Pie by Conrad Bengaluru

Easy Cake Batter: –

300 g all-purpose flour

60 ml cold vegetable fat

30 grams of sugar

10 ml apple cider vinegar

5 grams of salt

180 g cold unsalted butter, cut into small pieces

Cake Filling:-

All-purpose flour, for dusting

220 grams of pumpkin

80 ml whipping cream

40 grams of granulated sugar

3 large eggs

5 g ground cinnamon

2g freshly grated nutmeg

A few drops of vanilla extract

5 grams of salt

powdered sugar for sprinkling (optional)

On a lightly floured surface, roll out the dough into a 12-inch round. Ease into a 9 inch pie plate. Fold the excess pastry under you and pinch the edges with your fingers. Prick the bottom and sides all over with a fork. Refrigerate for at least 1 hour or overnight.

Preheat the oven to 350 degrees F.

Line the chilled dough with foil and fill with pie weights or dried beans. Place in the oven and bake until edges are golden brown, 20 to 25 minutes. Remove foil and weights and continue to bake until crust is golden all over, another 10 to 15 minutes. Place on a wire rack and let cool completely.

Prepare the filling: Beat the pumpkin, cream, granulated sugar, 2 eggs, cinnamon, nutmeg, vanilla and salt until fluffy (do not overmix). Whisk the remaining egg and brush the edge of the crust with it; sprinkle with coarse sugar. Pour filling into crust and bake until set around edges, 50 minutes to 1 hour (center will still wobble slightly). transfer to a rack; let cool completely.

Stuffed turkey breast

2 skinless, boneless turkey breast halves (about 1 pound per half)*

4 garlic cloves, pressed

1 large shallot, finely chopped

4 tbsp flat-leaf parsley, chopped

2 TBSP. fresh rosemary, finely chopped

1 TBSP. grated orange zest

4 tbsp. olive oil, shared

Kosher salt and pepper

sauce, for serving

Heat oven to 425°F. In a medium bowl, combine garlic, shallot, parsley, rosemary, orange zest, 2 tablespoons olive oil, and ½ teaspoon each salt and pepper.

Working with one turkey breast half at a time, remove the skin in one piece, being careful not to tear it, and set aside.

Butterfly and pat each breast to 1/4-inch thick. Divide the herb mixture onto each breast, leaving a 3/4-in. border all around. Starting at the short end, roll up each turkey breast. Place the skin on each breast, pin and wrap under the edges, then tie with kitchen twine, keeping them about 2 inches apart. Place on a rimmed baking sheet.

Brush each with 1 tbsp oil, season with ½ tsp salt and roast for 25 min, then reduce oven temperature to 375°F and continue roasting until internal temperature reaches 160°F on an instant read thermometer, 25 to 30 min more. Place the breasts on a cutting board and let them rest for at least 10 minutes.

Remove thread, cut into slices and arrange on a platter. Garnish with more fresh herbs if you like. Serve with pan sauce.
